Mejillones en escabeche: Mussel escabeche, preserved orange and pickled padron peppers

Brent Maxwell is the Executive Chef at East Thirty Six in downtown Toronto. He spent a part of his culinary career at Oliver & Bonacini as a line cook and worked his way up. His menu was influenced from a trip to Maison Pic in France where he worked along side chef Anne-Sophie Pic.
